#9... #9... #9... “say you wanna revolution...”? Skip it... it’s a bittersweet symphony. 9 refers to the number of beans in this blend. Nothing truly revolutionary there. Valrhona’s Guanaja with its 10 or more beans pre-dates Amedei (an envious-turned-contemptuous understudy of the vaunted French house). So many beans, who keeps track? Cracking the code; picking the combination lock; de-constructing the blend – a doable job on this hard-hat construction site baring its seams. Kind of revolting work though, when you can just take a break & enjoy it. Like Lennon singing about Mao in his #9, but with a difference: this bar’s gonna make it with just about everyone anyhow - so many flavors coming at you... a paparazzi of cameras popping brightly, some that blow out, with dilatory after-flashes in your field of vision - even with eyes closed - long after the pics have been shot. Appearances, however, can be deceiving. The soundtrack to this is really a ballad by N.I.N. Trent Reznor tenderly hammering 9 beans right into the skull, so by the end, they softly enclose the cranium in a coffin of a crash-bar accident. With deepest sympathy & regret, its rating falls just short, in a great chocolate tragedy, of its name.

3 layers as purple as its color: balsa wood, hazelnut, decomposing foliage; spice (ginger & clove over vanilla), deep-sided bougainvillea crossed by frangipani; milky chocolate breath, & unmistakable whallop of Chuao (a scent all its own, turning cliché tags such as ‘hints of molasses’ pale, then meaningless)

Scaffold of 9 beans, seemingly customized roasting for each; builds up to acids ultimately suppressed by a) Amedei’s typical blackened profile, & b) speed of the melt. Structure overall resembles Frank Gehry blueprints: a mangle of shapes & distorted patterns, curious cornices & crevices; haphazard FXs.
