Critique the Critic

If barsmiths are a sensitive bunch, their critics by contrast form a club of bristling snobs.

They run around all day long as a pack of dogs, butt-sniffing chocolates... "Hmmm, yes, so redolent of tropical fruit gas"... show more »

Nestlé's Quik® / instant Ovaltine® / Bosco® -> Brazil nutty & pili too -> a hard robusto coffee mineralizes into manganese -> goes green & vegetal (artichoke & asparagus) prior to a umami moment -> bright-closing (silica backed in iron) -> latent cocoa in the aft-length

From Samar Island, Philippines so name after samad in the local dialect meaning "cut" to aptly describe the rough 'n rugged terrain dissected by streams.

These NIbs take after the landscape from which they came.

Perilously close to burnt, scraping those charred coffee grounds (in the early progression) but comes off the precipice for a fairly multi-faceted, ahem, 'complex'. (NOTE: the proper noun rather than the forbidden adjective.)

Though a bit jolting, they never stray too far off coarse. Thus sufficiently contained & controlled, Strita plays on the edge with a seed type of modest phenols & volatiles (evidence of moderate ferment & adequate sun-drying).

The bottom notes could translate well into core cocoa flavor whence crafted into a chocolate bar to carry those minerals, gleaned here in these Nibs at the mid-section, into some upper register impressions.
