Choclate from Chiapas… to benefit Kakaw -- Museo del Cacao & Chocolatería Cultural in San Cristobal de las Chiapas, Mexico.

The curators there no doubt enshrine the passionate churchgoers of Anno Domini 1648 who turned against the local bishop for getting between them & their chocolate.

Trouble began when the ladies in his congregation iritated him by taking chocolate during Mass. He banned it from the cathedral & threatened to excommunicate anyone who ate or drank during services. Unwilling to do without their mid-Mass fix, the women boycotted. The cathedral emptied. Notwithstanding death threats against him, the bishop stood firm. Shortly afterwards he was found dead… from poison-laced chocolate.

To this day, a Mexican proverb warns: Beware the chocolate of Chiapas.

Duly forewarned.

Flavor   23.6 / 50
100%
bitter dirt on the soles of the shoes -> calms down (somewhat) into potted soil -> sedimentary fractions cause a bitter black upheaval & goes on a tear from there, deteriorating into the boneyard of graveyards -> returns in another incarnation (re: the lingering aft-life of this bar) as a spore / mushroom

Sacarosa
wood pylon -> sugared coffee -> burnt grounds

Stevia
Aroma hangover, alas, lasts only briefly to combat the same woes of previous bars -> roasted tire inner tubes
Quality   6.9 / 20
100%
Godforsaken. Christ, what happened to the Aromatics. Buried.
Supposedly native Chiapas cacáo in homage to the Mayan. Sold bearing the inscription Pasión pro nuestra culture (click image upper right to enlarge). If true, that culture has a lot of explaining to do. Like where now are all the intensely-bred Criollo of theirs which Fray Bartolomé de Fuensalida chronicled in 1618 tasted fine without any additives. Perhaps somewhere in the lost & not-yet-found.
Ghastly. If bitter be thy medicine, this surpasses hospital care.
INGREDIENTS: cocoa mass

Sacarosa
70%
Fierce.
30% sucrose accomplishes little for this battered seed stock.
No mas, por favor.
INGREDIENTS: cocoa mass, sucrose

Stevia
70%
This much-maligned sweetener almost turns around the fortunes of this line. Enough so to suggest that all mediocre barsmiths utilize it to mask their mistakes & defects.
INGREDIENTS: cocoa mass, stevia

Capsule Summary -- atrocious cacáo quality further destroyed for good measure by poor handling / processing. Burnt bulk to test one's resolve / mettle.
Proud Amerinds should sue the museum for cultural defamation.
