Campesino may sound like some luxury camping trip in the woods, complete with 5-star tents & catered meals over a microwave campfire, but this Spanish term entails just the opposite: a peasant (or euphemistically, 'country folk').

These humble beans offer a taste of that from a distance... a quick visit without having to live it, akin to sleeping under a cacáo tree for a one-night stand
Appearance   3.2 / 5
a motley, straggly slew
Color: parched-pale on the exterior; dark-devil interior
Surface: all shapes & sizes... from small to medium large, flats (a bitch to unhusk) to plump (easy pickings)
Temper: vinyl
Snap: n/a
Aroma   6.9 / 10
a very light chemical bath: acetic acid, vinegar & nail polish mixed with a little ethanol -> pencil shavings
Mouthfeel   12.7 / 15
Texture: spongy
Melt: prolonged chew
Flavor   42 / 50
the crew at Nova speak of hardwood smoke, raisins, honey & caramel which, other than the wood, gilds an experience more closely related to:
cocoa undertone with a decaying fruit overlay -> minerality picks up -> banana -> nuts & herbs -> mushroom paté -> bitter bark at the finish
Quality   15.9 / 20
Flavors runs a little "cold".

Excepting the end, very controlled bitterness though.

All in all, a basic cocoa batch well cultivated.

ING: whole bean cocoa
