Box Chocolate Review

Info Details
Country USA   (Los Angeles)
Style New School
Chocolate hooks up with Cali-fusion cuisine. Maybe LA’s best, which still puts it miles away, & in another state altogether, from its Bay Area counterparts.
Presentation   4.2 / 5
Tiffany-striver - powder-blue box (nearly teal); half-dome pieces inside
Aromas   4.4 / 5
infusion forced
Textures/Melt   7.6 / 10
Shells: semi-thick
Centers: firmer version of Belgian-style ganache due to slightly less cream
Flavor   39.3 / 50
chocolate loses out to infused flavors; alternately innovative & trying, electric & horrific
Quality   21.9 / 30
Uneven line
Couverture: generic
Beckham - fairly wicked bender; plays along fenugreek & a cardamom before settling into its hazelnut base driving the texture while the curry does the talking; excellent
Mahal – kalamansi lime in White; clear, clean, class
Veda Ginger– true to spirit
Brittany – fleur de sel caramel; a little bit of sel & a lot of caramel pump thru dark ganache topped by a milk robe pushing right down the amusement park midway
Fatale - scotch bonnet / pepper... “intellectual” (the maker writes); a burning mosh pit... all fire-no metal fury w/out a message... fatal catastrophizing
Jade – green tea; a tweedy librarian tone of dark woods under an overhead light; nice
Carver – peanut praline; a tablespoon of crunch
Dante – Sicilian Pistachio, a mafia of marzipan; sweet & dapper on 1 side, dark & suffocating on the other
Lilli – Passion Fruit-Ivoire; brassy, irrational passion
Bronte – Raspberry Earl Grey; chocolate just an even platform for awkward concatenations
Cela – Quatre Epice, comme ci comme cela
