Inchoate scatter-logic

rustic yet colorful; pieces in various shapes & sizes, scored in different directions working wonders on the eye

cocoa deep
Textures/Melt   8.1 / 10
Shells: generally on thick side
Centers: nicely yielding
Flavor   34.9 / 50
typically forward as if focus-group tested; tend toward busy & heavy-handed
Quality   17.7 / 30
Young & early on the learning curve
Couverture: Callebaut
White Chocolate Coconut Carmel Truffle – imblanced; cocoa lost in the busy coconut
White Chocolate Cinnamon Cocoa Nib – frontal spice attack, direct from the cinnamon stick, good backup from the nib section; perhaps signature piece
Pecan Rolled Ganche – again, chocolate secondary to the concoction - as good as it is; less a truffle than a dessert cordial
Milk Vanilla Malt – honest
Milk Balsamic Vinegar – innovation requires precision; this an awkward fashion statement; lacks subtlety for such a strong element that destroys the chocolate canvas, turning it into a flat mat
Caramel Popcorn ‘n Peanut – deft, subtle, & supple w/ persistent corn finish; fully adult w/out the Reese’s kids candy stuff
Dark Earl Grey – strong tea accents, perhaps too strong… developing pattern of a line that needs time to maturity
Zinfandel Port & Coconut Rum – oozy disaster
