Chocolate Arts? Yeah, maybe Jackson Pollack after a semester-long drinking & smoking binge, freshman year, art student league. Either that or the magick act of making something disappear... precious little real chocolate here.
Presentation   3.7 / 5
desert treasure: dull & dry goods buried in sand
Aromas   3.6 / 5
more dust FXs (smell of Callebaut) – cinnamon, cocoa, vanilla powder
Textures/Melt   7.2 / 10
Shells: medium thin
Centers: lone salvation – very even cream
Flavor   21.4 / 50
bolt upright
Quality   10.8 / 30
Generally unbalanced, off the fulcrum.
Selections
Couverture: Callebaut; Valrhona
Rustica – judicious cinnamon exciter to a closed, limited Cuban cacáo (thanks Callebaut) that never backs it up; missed op
Lemon & Basil – White ganache / Dark shell; again choc MIA but the lemon-basil blend brings the bling as citrus covers the high register against the herb for balanced structure; incomplete but noteworthy
Jasmine – Jas-Green Tea a bean-stomper of Valrhona’s dozen or so bean bar-blend Guanaja
Rhubarb Rhapsody – texturally & taste-wise nearly gelée... creamed-up milk center set in paper-thin but sugar-coated shell thru which rhubarb just rips it w/ hyper-enthusiasm
Cashew Log – boxed candy
Cristina – lemon, vanilla + White Choc rolled in a dark log; fake deli chocolate cannoli fare
Romeo – DOA; blackberry in Dark shaped pyramid; a tombstone for the lover boy
