Virutally no bitterness. Even the topsoil element loads in minerals of the good Earth variety.

In a rarity, the kind of cocoa that performs better as Nibs than as chocolate because its chemical compounds sit rather plain & simple without the dynamic volatiles responsible for creating a diverse flavor array in a bar. And Mesocacao's bars meet with such expectations (nothing bad; just the opposite; only basic) as well as makes for tolerable high percentage bars up to 90%.
