According to Maya chronicles (e.g., the Book of Chilam Balam of Chumayel), Hunac Ceel, ruler of Mayapan, conquered Chichen Itza in the 13th century. He supposedly prophesied his own rise to power. According to custom, individuals thrown into the Cenote Sagrado (a deep water-filled sinkhole in limestone) were believed to have the power of prophecy -- IF they survived! During one such ceremony, the chronicles state, there were no survivors, so Hunac Ceel leapt into the Cenote Sagrado &, upon re-surfacing, prophesied his reign.

This bar perhaps foretells the resurgence of Chiapas, Mexico's once gloried cacáo groves. In the process, it makes a Maya Vinic (Tzotzil for “Mayan Man”) of M. Stéphane Bonnat.
Appearance   4.6 / 5
Color: aubergine-rouge
Surface: scratchless
Temper: impervious
Snap: buttered-up Beta Vs
Aroma   7.8 / 10
sopping sticky sour sap -> substrate hash-clay -> tell-tale prickly cue of Mexico (pine + cacti)
Mouthfeel   13.3 / 15
Texture: very French (round, full &...
Melt: ... slow)
Flavor   46.2 / 50
small florals infuse around very dark chocolate fudge brownie -> blossoms forth flower power (in the guise of the jasmine-like Queashuva) against mounting acidity (first jicama, then guava) -> tapioca -> limestone -> chia seeds -> nopales -> clean loam
Quality   17.7 / 20
Hardly the most popular or even winsome flavor tags. Some unusual / unorthodox. Monumental all the same.

Bonnat lays off its typical processing by a fraction. The result: really terra-driven. Scrapes the Mex landscape in essence to excavate the place-notes.

One of those bars that, after sampling dozens of others, stands out; as peculiar if nothing else. A palate cleanser in & of its own right. Yeah, selva (jungle) pretty much sums it up. Good thing Bonnat added sugar + cocoa butter lest it get wild.

INGREDIENTS: cocoa mass, sugar, cocoa butter; Barithmetic (Cocoa mass / Butter / Sugar ratio): ~2:3:3
