Appearance   3.2 / 5
rare whey-faced schlub from Bernachon
Color: dark mud
Surface: smudged & fudged
Temper: angry
Snap: splinter cake; dirty (lighter shade) edge wall
Aroma   8.2 / 10
deep-field infra-earth: heady library of cocoa, coffee, marula nut seed shielded by filbert, & cigar tobacco
Mouthfeel   12.4 / 15
Texture: dual texture: soft, sinking-ganache feeling (almost caramel-like - very tooth-friendly) in the center encased by a tablet shell
Melt: elapsed as an (half)hourglass
Flavor   41.6 / 50
cocoa dunk in coffee -> sugar glaze from the bottomless cup... great crystal interplay between it & the coffee grinds -> nuts start making a little noise (oils of hazelnuts bathing the beans) cut by a quik fruit juice stream -> gushy sugars come flooding back up to a chocolate rush -> resurgent coffee just buckets the end
Quality   17.3 / 20
The taste similarly multi-structured along the very lines of texture (praliné fill at the center wrapped by the main chocolate component of the bar). Superb balance in the mid-pal bracketed on front & back sides by all that coffee (in true Bernachon fashion a bit of a heavy pour which this bar has a hard time containing though considerably less than his straight Café).
ING: cocoa mass, sugar, cacáo butter, praliné fill, coffee, salt, vanilla bean, non-GMO lecithin
