Dirty citrus blonde. The Affinity cocktail or Rob Roy resuscitated; or some other variation on the Manhattan that ‘supoib’ NYC mixologist Jonathan Pogash (in da ‘hood they’re still called bartenders) could concoct (drinks mimic chocolate – stuff gets severely hybridized real fast) – in this case a Womanhattan. Prosaic shades of Domori’s own Sambirano lab bars... just 1 or 2 reactions away from a science blister kit.
Appearance   4.7 / 5

Snap: clean & crisp &, w/ looks like this, no need to raise its voice
Aroma   5.4 / 10
jumpin’ jack flash... leather, wax, rubber, &... it’s a gas, gas, gas
Mouthfeel   12.7 / 15
Texture: firm body
Melt: slow, even flow
Flavor   38.9 / 50
beautiful caramel sunrise -> quickly turns shady under a coffee tang -> raw citrus power pinned in alcohol -> lights up dusky & smoky -> ashen meyer lemon & yuzu -> not so much tobacco as propane fumes in the backdrop, against mounting acidity rising from the ashes -> B-B-Q sauce turned Manhattan-variant cocktail -> low chocolate bang -> citric wash-out -> lasting finish on faint sandalwood
Quality   14.8 / 20
With an assisted smoked-drying method that can amount to a built-in roast, Java beans seem ideal for Domori’s low-impact processing. This edit lets go a rapid ferment creating acerbic personality as if taking Auntie Mame's advice: "Stir, never shake. It bruises the gin." The highly visible Criollos germplasm, featured on the box, tastes submerged beneath other hybrids. Domori’s new to the region (his name & fame are built mainly on S American & Caribbean stock, particularly prized Venezuelan beans). Javablond shows it’ll take a couple iterations to come to.
