sweet white sapote (taste of peach x banana) in short chocolate -> bartlett pear -> litchi -> loquat the citrus exciter -> acidity rising to pineapple, then rips toward white grapefruit, tight ginger underside & balsam + white cedar struggling to take root while chocolate fades -> sugar dissolves into pure ever-clear acids, nearing bright, harsh levels

A new release for Coppeneur - & it shows, having yet to get a handle on it. Beautiful front-side tilts severely imbalanced - way too top heavy; lacks sufficient structure underneath (too few tannins for support). The processing up to a certain level is adequate. A deeper roast could fractionally help to squelch brightness & bring out darker tones. Conche it any more would just further emaciate an already anorexic bean. CBS (cocoa mass/cacáo butter/sugar) of 3:5:3 may be a culprit (butter soothes the acid bath - to a degree - but, being of the softer variety, does too little for texture & nothing for tannic structure).

Sometimes it's just in the bean's gene &/or a given crop. For this cycle, the verdict is it doesn't win any lottery. Still, a unique take showing other possibilities for this origin.
