The legendary bunyip monster supposedly inhabit swamps & lagoons.

Descriptions vary but it resembles a giant starfish or other accounts liken it to a dog face with dark fur, horse-tail, flippers, & walrus tusks.

Woa.

Its name, derived from the Wemba-wemba, an Aboriginal language of southeast Australia where Nick’s operates, broadly refers nowadays to a pretender / humbug.

No imposter here; just an imposing set of bars from Down Under.

Belize
bold ferment teeming around green banana & mango

Domincan Republic
some stoned barnyard cocoa that includes the wood frame to the barn itself
Mouthfeel   12.4 / 15

Flavor   45 / 50
Venezuela
alights sweet honeycomb chocolate -> fruit display (papaya, guarana, & honeydew melon) -> wood, jute & hay -> resin -> sap -> cocona zest in treacle -> blows out tobacco

Belize
goes off nuts 'n cocoa -> plantain -> spices up cardamom-nutmeg, banana backdrop (the centerpiece, quite nice) -> long tobacco draw to the close -> grape skin stringency the aftermath

Domincan Republic
red La Red - chocolate-sapote 'n papaya -> as though rolled in cocoa dust for a little truffle action -> green walnut bounces into a walnut brownie -> comes on apricot -> ends with tamarind
Quality   17.3 / 20
Venezuela
75% cacáo-content; Canoabo Valley, Barlovento
Somewhat brusque. Just a couple more grams of sugar would tone this down (especially the wooden aspect) & bring up the fruit definition (as well as extend it). As is, a worthwhile exposition on an infrequent regional origin / cultivar -- Canoabo.

Belize
75% cacáo-content; Moho Valley
Good 'n plenty 'n strong from wire-to-wire. Glorious midsection, an extended finale & quite the punctuation at the post-script. Nick's controls the compounds while letting them play (modest roast / refinement).
A bar that demonstrates chops & cool.

Domincan Republic
73% cacáo-content; La Red (Los Pajones, María Trinidad Sánchez Province)
Another exceptional start-to-finish. Awesome staying power. Grand flavors. Semi-hefty percentage + astute processing (again, Nick's favors moderate roast & cuddling conche).
This bar alone the pride & cornerstone of just about any line; coupled with Venzy & Belize (above) & Nick's a serious Aussie rules player.
Nice work.

INGREDIENTS: cocoa mass, sugar, cocoa butter, lecithin
