big cocoa tannins come out thrashing... into a pure chocolate hit -> hazelnut-almond -> trace cinnamon + juniper negotiate background bitters -> transfers beautifully to bread & butter spreading starfruit & guava -> tart cherry & red currant -> stick in the mud pulls up coffee grounds, fertilizer, green stalk, & a psilocybin mushroom layered under dense cocoa for magic brownies -> long astringent end seals the deal

Gentle Giant thanks to a generous cut of quality cacáo butter (gleaned early on in the aroma). Still a bit angular & austere in character though, lacking the 'wow factors' of Lindt's 85% tour de force but shockingly gooood nonetheless, & absolutely damages its closest organic competitor, the 85 - Green & Black's.

A sedulous blend from well-husbanded beans reaching far around the world: both sides of Africa represented (Ghana, Tanzania &/or Madagascar) + maybe Ecuador (high astringency) - unmasked of any vanilla... just cacáo roasted & conched to near perfection with a little sugar (CBS ~2:4:1). Some backyard dirt gets caught in the butter-works but that too delivers soft power without which this bar would lack heft, depth, & symmetry.

"Organic" or otherwise, a fine chocolate by any standard... period.
