auto-transfer of the the aromatics, followed by a saline flush + a deep dark bitter choc hit (all excellent / mutually balancing) -> sturdy cow's milk-kick straight from the hoof to the mouth… rides under that bitter & for a second mimics goat's milk (sans the tang) -> umami replaces salt & any acerbic sting -> plumbs the depths to mocha

cinnamon Milk Chocolate -> vanilla -> cotton candy -> wax threatens to upend the progression but vanilla & sugar sustain the confectionary zeal in a moment of gegenschein -> malted cocoa puffs diluted in rice syrup

70% cacáo-content in the Dark-Milk format no longer unheard of, nor even presumably the top of the scales. But here it might just be the most potent Dark-Milk at any percentage. No sugar sweetener largely accounts for that, relying instead on milk's inherent lactose sugars.
Truly viral & quite a farmstead sensation.
Tyrolean mountain milk -- experienced earlier in Zotter's unparalleled NIcaragua 50 & the super sublimations of Domori Javagrey -- none like it. And this bar really turns up the brine wash: mineralized & galvanic. An acquired taste but what an acquisition.

From the man who formulates just about every Milk Chocolate known to mammals -- sheep, goats, cow, horse… name it -- comes this substitute constructed with rice powder.
Very clean. Hardly any sign of rice 'til the latter stages & then mostly malt. True, it runs thin at the end compared to regular Milks which usually thicken on the palate thru the melt. And yet this never loses flavor altogether. Just the opposite: it hangs on to deliver a laudable vegan alternative.
INGREDIENTS: raw cane sugar, cocoa mass, cocoa butter, rice powder (21%), salt, vanilla

Outstanding. Terrific unfolding, length, & flavor array. Again, as with its Reis dunked rice mate, very clean. No putty, no albumin, no caustic casein as often with regular White Chocolate produced with dairy. Just direct, genuine notes from a strong formulation that places cocoa butter at the top weight.
Whoever thought it possible to make great Dark-Milk & White Chocolate with rice? Leave it to Zotter.
