FLAVOR PROFILE: mainly fruit (soft intensity reds – especially cherry cordial) & an air-pocket of fleeting flowers (honeysuckle rose, jasmine, chrysanthemum) + that famed marshmallow; sometimes honey, nuts & spices

CHARACTERISTICS: overall delicate; softly astringent & acidic

Colombian cacáo hybrid: Criollo + an Amazon type called Pajarito & named after the Cauca River Valley in the Antioquia region where a beverage similar to that of traditional Mesoamerica suggests a link between Central & South American cacáo cultures.
